Best shields/HAT for Raspberry Pi?

I want to connect my Raspberry Pi 3B+ to the internet. I won’t to use this internet connection to upload data to a server for monitoring.
I will use the MQTT protocol.
But I don’t know what is the best shields for my Raspberry Pi.
I just won’t have a stable Internet connection.
